梅との出会い
水と同様、飼料も牛への影響を考えて選びました。
「トウモロコシをたくさん食べさせると早く成長するけど、美味しくならないんですよ。他所は配合の飼料を買ってくることが多いけど、うちは単味で買ってきたものを撹拌して使ってます」
その飼料の一つとして、紹介されたのが梅酒を作るのに使った後の梅の実でした。
「丁度BSEの前の年だったか、羽曳野にある大阪府の農業技術センターが使わないかと、羽曳野のワインメーカーの梅をもってきたんです」
牛の食いつきは良かったのですが、思わぬ問題が発生しました。
「梅の種を牛が全部食べずに吐き出すんや。牛舎に種が散乱して『これは使われへんわ』と断ろうとしたら、『チョーヤ』の社長さんが『うちで種ごと全部砕きますよ』って」
粉砕梅の実の結果は良好でした。
「今度は綺麗に食べたよ。掃除する手間もないし、牛は口中ヨダレだらけにして喜ぶし。種の中にある仁（じん）に栄養があって、これを食べてくれる」
農業技術センターでは、梅の実を食べた牛とそうでない牛で対照実験も行いました。
「『ビタミンE1（αトコフェロール）』が摂取でき、細胞壁が丈夫になってドリップが出にくくなり、変色も抑えられる効果がありました」
こうして生まれた牛肉は、原野さんらによってシンプルに「ウメビーフ」と名付けられたのでした。
A wonderful encounter
The feed for cattle has been carefully selected same as water. “Corns accelerate growing cattle but don’t make taste good. Other dairymen often use the mixed feed but we use the plain one.”
As one of the feed introduced by the Prefectural Agricultural Technology Center was Japanese apricot from the left released after producing plum wine.
“Just before BSE disturbance, they brought us the Japanese apricot released by a wine maker.”
It seemed to work at first, but caused the problem unexpectedly.
“Unfortunately, cattle couldn’t keep the apricots down and seeds of apricot scattered everywhere in the barn. Just before I gave up and was about to turn the offer down, the president of CHOYA proposed to crush the seeds.”
“This worked quite well. Cattle were pleased to eat them and there was no need for us to tidy up and the good thing is that cattle eat mutual inside the apricot.”
The Agricultural Technology Center conducted the control experiment comparing the cattle having an apricot with others.
“The experiment results were revealed that the stronger cellular walls effected from Vitamin E1 prevented drips and discoloration.”
This is how the beef was borne and named “Ume Beef” by Mr. Harano.
